Goat cheese with mango and crisp spice cake

Ingredients

  • 30 g spice cake
  • 100 g soft goat cheese
  • 20 g cream
  • honey
  • 1 fresh mango
  • sugar
  • water
  • fresh chive
  • pepper

    Cut the spice cake in very thin slices, and dry them in the oven at  65°C until they’re crisp.

    Mix the smooth goat cheese (without crust) with cream, pepper and honey, until it is nice and spreadable, and put it in a piping bag.

    Make sugared water by shortly boiling equal parts of water and sugar and let it cool down.

    Cut the mango brunoise and marinate in the sugared water.

    Put some goat cheese cream in each bowl, and add the mango cubes.

    Finish with the spice cake crisp and some chive.
